Ingredients for 15 fruit baskets
|500 g||Fresh ricotta|
|8||Common figs (purple in colour|
|15 strips||Smoked bacon|
|q.b.||Pepper, extra virgin olive oil, rosemary|
Place the bacon strips on overturned muffin moulds in order to create a basket and then place them in the oven. Allow them to cool and pat them dry.
In the meantime, flavor the ricotta with oil, salt and pepper. Cut the figs and brown them in some butter. Remove from the skillet and sprinkle with salt and minced rosemary.
Fill the crispy bacon baskets with the seasoned ricotta and the rosemary-flavoured figs.
Prepare quenelles (dumplings) with fig sherbet; place them on the flavored ricotta and sprinkle with minced rosemary.
