Sea bass in a green crust

An idea for a fish dish?

Fresh, fast and striking!


Ingredients for four servings

2 fresh sea bass
2 Twigns of thyme
1 Zucchini (straight to facilitate the slicing)
q.b. Salt, pepper, extra virgin olive oil

Preheat oven to 180°C


Slice the zucchini thinly using a mandoline.  Sprinkle them with salt and put aside while preparing the fish.


Fillet the sea bass so that there are four equal pieces with the skin still attached.

Place the fillet, skin-down, in an oven dish; flavor it with salt, pepper and oil and completely cover the fish with the zucchini slices.

Brush with oil and bake in the oven for about 15 minutes.


Serve with greens and small fresh tomatoes.
